For the Filling:
5–6 fresh peaches, sliced (or 2 cans drained)
½ cup brown sugar
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp lemon juice
1 tbsp cornstarch (optional, for thickening)

1 cup all-purpose flour
1 cup sugar
1 tbsp baking powder
½ tsp salt
¾ cup milk
½ stick butter (melted)

Preheat your drum smoker to 300°F (149°C).
Add a small chunk of peach or apple wood for a light smoke flavor.
Toss sliced peaches with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
Pour into a greased cast iron skillet or foil pan.
In a bowl, mix flour, sugar, baking powder, and salt.
Stir in milk and melted butter until just combined (don’t overmix).
Spoon batter evenly over peach mixture — it will spread as it bakes.
Place pan in smoker over indirect heat.
Bake for 45–60 minutes, or until golden brown on top and bubbling around the edges.
Rotate halfway through for even cooking.
Let cool for 10–15 minutes.
Serve warm with vanilla ice cream or whipped cream.
